And as autumn draws near, her berries ripen, rich with antioxidants and flavonoids, strengthening the heart both physically and emotionally.

            ½ cup cleaned, de-seeded rosehips (or 2 tbsp if dried)

            Clean, dry eggshells (as many as you wish - I usually save them over time)
           &#xD;
      &lt;/li&gt;&#xD;
      &lt;li&gt;&#xD;
        
            A pestle and mortar (or a grinder, though handwork carries its own magic)
           &#xD;
      &lt;/li&gt;&#xD;
      &lt;li&gt;&#xD;
        
            A small bowl or jar for storage
           &#xD;
      &lt;/li&gt;&#xD;
    &lt;/ul&gt;&#xD;
  &lt;/div&gt;&#xD;

            1 cup raw honey (not for children under 2 years old)
           &#xD;
      &lt;/span&gt;&#xD;

            Star anise (optional)
           &#xD;
      &lt;/span&gt;&#xD;

           Instructions:
          &#xD;
    &lt;/span&gt;&#xD;
  &lt;/h4&gt;&#xD;
  &lt;ol&gt;&#xD;

      &lt;span&gt;&#xD;
        
            In a stainless-steel saucepan, add the cup of elderberries, 3 cups of water, the cinnamon stick, whole cloves, star anise (if using) and grated ginger.
           &#xD;
      &lt;/span&gt;&#xD;
    &lt;/li&gt;&#xD;
    &lt;li&gt;&#xD;
      &lt;span&gt;&#xD;
        
            Bring the mixture to a boil over medium heat. Once boiling, reduce the heat and let it simmer on low. Continue to simmer until the liquid has reduced by about half.
           &#xD;
      &lt;/span&gt;&#xD;
    &lt;/li&gt;&#xD;
    &lt;li&gt;&#xD;
      &lt;span&gt;&#xD;
        
            Pour the mixture through a cheesecloth (a jelly bag or clean muslin will also work) set over a glass bowl. Use a wooden spoon to press the pulp through the mesh to separate the liquid from the spices and seeds.
           &#xD;
      &lt;/span&gt;&#xD;
    &lt;/li&gt;&#xD;
    &lt;li&gt;&#xD;
      &lt;span&gt;&#xD;
        
            Add 1 cup of raw honey to the warm elderberry liquid. Stir well to combine. Allow the mixture to cool, then transfer it into a sterilized jar.
           &#xD;
      &lt;/span&gt;&#xD;
    &lt;/li&gt;&#xD;
    &lt;li&gt;&#xD;
      &lt;span&gt;&#xD;
        
            Seal the jar with a lid and store it in the refrigerator. It should be good for the winter if kept cold.
           &#xD;
      &lt;/span&gt;&#xD;
    &lt;/li&gt;&#xD;
  &lt;/ol&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      &lt;br/&gt;&#xD;

    &lt;span&gt;&#xD;
      
           Take 1 teaspoon of elderberry syrup after exposure to a respiratory infection or at the first sign of illness. For active symptoms, you can take it every 3 hours. The syrup can also be used as a cough suppressant or to flavour teas, desserts and prosecco.
          &#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      &lt;br/&gt;&#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;h4&gt;&#xD;
    &lt;span&gt;&#xD;
      
           Important Cautions:
          &#xD;
    &lt;/span&gt;&#xD;
  &lt;/h4&gt;&#xD;
  &lt;ul&gt;&#xD;
    &lt;li&gt;&#xD;
      &lt;span&gt;&#xD;
        
            Only use deep-blue/purple berry clusters that droop downward. Avoid upright clusters and red elderberries.
           &#xD;
      &lt;/span&gt;&#xD;
    &lt;/li&gt;&#xD;
    &lt;li&gt;&#xD;
      &lt;span&gt;&#xD;
        
            Do not consume raw elderberries, leaves, bark, or twigs. They can be toxic.
           &#xD;
      &lt;/span&gt;&#xD;
    &lt;/li&gt;&#xD;
    &lt;li&gt;&#xD;
      &lt;span&gt;&#xD;
        
            Do not give elderberry syrup to children under 2 years old.
           &#xD;
      &lt;/span&gt;&#xD;

      &lt;span&gt;&#xD;
        
            If you are pregnant or taking prescription medications, you should consult a healthcare professional before using any herbal syrup or tinctures.

            Have an abundance of elderberries? Use what you need now, and store the rest in the freezer. This way you can make up more syrup as and when you need it throughout the winter.

           You know I'm big on Self-care and it will probably come as no surprise that it is particularly important during the winter months.

           Love winter, or hate it, unless you can disappear for a few months of the year, there is no getting away from it! The short, dark days can take their toll on us all and affect our physical and mental health.

      &lt;br/&gt;&#xD;
      
           There can be lots to enjoy about the changing seasons. Winter gives us extra time to snuggle under a fluffy blanket with a good book, to enjoy warm and hearty comfort food and to spend more time with friends and family. But, we’re also more likely to catch colds, and experience a dip in mood due to the lack of daylight.
           &#xD;

      &lt;br/&gt;&#xD;
      
           It's not always easy to put ourselves first, but doing so can help us to be the best version of ourselves, both mentally and physically.

           In it’s lifetime a bee will produce a precious 1/12th of a teaspoon of honey - and they love the humble dandelion! To humans, it is often thought of as a pesky weed, something that needs to removed from the lawn, but they are so much more than that!
            &#xD;
      &lt;br/&gt;&#xD;
      &lt;br/&gt;&#xD;
      
           They are in full bloom right now. Go for a walk and you will see them shining like beautiful yellow stars in fields and hedgerows everywhere. I don't know about you, but I find them to be very cheerful.
            &#xD;
      &lt;br/&gt;&#xD;
      &lt;br/&gt;&#xD;
      
           Not only are they happy sight to behold, they also have far reaching health benefits. Herbalists use the whole plant; root, stem, leaf and flower, and each part has different medicinal actions. Dandelion is a wonderful anti-viral and the flowers have a particularly positive effect on the heart. They also help to detoxify the liver.
            &#xD;
      &lt;br/&gt;&#xD;
      &lt;br/&gt;&#xD;
      
           Dandelion honey is a delicious and nutritious alternative to traditional honey. It has a unique flavour that is both floral and slightly bitter, it's high in antioxidants and other beneficial compounds and, it's vegan!
           &#xD;
      &lt;br/&gt;&#xD;
      &lt;br/&gt;&#xD;
      
           Making dandelion honey is a simple process that you can do at home with just a few ingredients. In this post, I'll walk you through the steps to make your own dandelion honey.
           &#xD;
      &lt;br/&gt;&#xD;
      &lt;br/&gt;&#xD;
    &lt;/span&gt;&#xD;
    &lt;span&gt;&#xD;
      
           Ingredients:
          &#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      &lt;br/&gt;&#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;ul&gt;&#xD;
    &lt;li&gt;&#xD;
      &lt;span&gt;&#xD;
        
            100g fresh dandelion flowerheads
           &#xD;
      &lt;/span&gt;&#xD;
    &lt;/li&gt;&#xD;
    &lt;li&gt;&#xD;
      &lt;span&gt;&#xD;
        
            2 slices lemon
           &#xD;
      &lt;/span&gt;&#xD;
    &lt;/li&gt;&#xD;
    &lt;li&gt;&#xD;
      &lt;span&gt;&#xD;
        
            350 ml water
           &#xD;
      &lt;/span&gt;&#xD;
    &lt;/li&gt;&#xD;
    &lt;li&gt;&#xD;
      &lt;span&gt;&#xD;
        
            300g unrefined, organic sugar
            &#xD;
        &lt;br/&gt;&#xD;
        &lt;br/&gt;&#xD;
        &lt;br/&gt;&#xD;
      &lt;/span&gt;&#xD;
    &lt;/li&gt;&#xD;
  &lt;/ul&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      
           Step 1: Gathering your dandelions*
          &#xD;
    &lt;/span&gt;&#xD;
    &lt;span&gt;&#xD;
      &lt;span&gt;&#xD;
        &lt;br/&gt;&#xD;
        
            Get out on a sunny day and forage your dandelions (avoid roadsides, and areas with lots of pollution). Look
           &#xD;
      &lt;/span&gt;&#xD;
    &lt;/span&gt;&#xD;
    &lt;span&gt;&#xD;
      
           for flowers that are fully open and have a bright yellow colour. Avoid flowers that are starting to wilt or turn brown. As you pick, give each flower a gentle shake to allow any insects to drop out. If you have kids, they will love getting involved with this!
            &#xD;
      &lt;br/&gt;&#xD;
      &lt;br/&gt;&#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      
           Once you've gathered your dandelion flowers, remove the green parts at the base of each flower. You can do this by pinching the base of the flower and pulling the green parts away. I like to leave them face-down on a towel for 30 minutes to allow and remaining 'residents' to move out.
           &#xD;
      &lt;br/&gt;&#xD;
      &lt;br/&gt;&#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      
           Step 2: Making Dandelion Infusion
          &#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      
           The next step is to make a dandelion infusion. To do this, place the dandelion flowers and lemon slices in a large pot and cover the water. Bring to boil and then simmer for about 15 minutes. Cover with a lid and leave overnight to further infuse.
           &#xD;
      &lt;br/&gt;&#xD;
      &lt;br/&gt;&#xD;
    &lt;/span&gt;&#xD;
    &lt;span&gt;&#xD;
      
           Step 3: Making Dandelion Syrup
          &#xD;
    &lt;/span&gt;&#xD;
    &lt;span&gt;&#xD;
      &lt;br/&gt;&#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      
           Strain out the flowers using a fine mesh strainer or muslin making sure to press the flowers and extract as much liquid as possible.
          &#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      &lt;br/&gt;&#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      
           Return liquid to  pot and bring to a rolling simmer.  It's now time to add your sugar. Stir the mixture over low heat until the sugar has completely dissolved.
           &#xD;
      &lt;br/&gt;&#xD;
      &lt;br/&gt;&#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      
           Once the sugar has dissolved, increase the heat to medium-high and bring the mixture to a boil. Boil the mixture for about 5 minutes, or until it has thickened and become syrupy.
           &#xD;
      &lt;br/&gt;&#xD;
      &lt;br/&gt;&#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      
           Step 4: Jarring and Storing Dandelion Honey
          &#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      
           The final step is to decant your dandelion honey into sterilized jars. To do this, Wash in jars in hot, soapy water, place upside down on a wire rack and put in a pre-heated oven  (160-180) for 10-15 minutes.
           &#xD;
      &lt;br/&gt;&#xD;
      &lt;br/&gt;&#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      &lt;span&gt;&#xD;
        
            Once your jars and lids are sterilized, pour the hot dandelion syrup into the jars, leaving about 1/4 inch of space at the top.
           &#xD;
      &lt;/span&gt;&#xD;
    &lt;/span&gt;&#xD;
    &lt;span&gt;&#xD;
      
           Be careful - it's hot!
          &#xD;
    &lt;/span&gt;&#xD;
    &lt;span&gt;&#xD;
      &lt;span&gt;&#xD;
        
            Wipe the rims of the jars with a clean, damp cloth and place the lids on top.
           &#xD;
      &lt;/span&gt;&#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      &lt;br/&gt;&#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      
           Leave the jars to sit in hot water for 10 minutes to ensure they are properly sealed. Once the jars have cooled, store them in a cool, dark place for up to a year.
          &#xD;
    &lt;/span&gt;&#xD;
    &lt;span&gt;&#xD;
      &lt;br/&gt;&#xD;
      &lt;br/&gt;&#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      
           *Responsible foraging. Never pick all of the plants in an area. Take only what you need and not more than 25% of what is available - we need to leave plenty behind for the wildlife! Don't consume anything you aren't 100% certain of.
           &#xD;
      &lt;br/&gt;&#xD;
      &lt;br/&gt;&#xD;

           As the winter months come to an end, the energy of spring begins to emerge. This season is often associated with new beginnings, growth, and transformation. In my mind, that makes it the perfect time to focus on manifesting your dreams. There are many ways you may choose to do this, but have you ever considered using yoga to help you achieve your goals?
          &#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      &lt;br/&gt;&#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      &lt;span&gt;&#xD;
        
            Yoga has been practiced for thousands of years to cultivate physical, mental, and spiritual wellbeing. It helps you to connect with your inner self and tap into your intuition. This makes it a great way to manifest your dreams because it allows you to see if what you wish for is really in alignment with your heart.
            &#xD;
        &lt;br/&gt;&#xD;
        &lt;br/&gt;&#xD;
        
            It is really easy to do and can simply be an addition to your existing practice. Simply take time to set an intention at the start of your practice. It can be anything you want to manifest in your life...a new job, a new home, a loving relationship...It may jbe as simple as living your life in a more peaceful state of mind.

           Once you've set your intention, you can begin your practice. Focus on your breath and the sensations in your body. Allow yourself to be fully present in the moment and let go of any thoughts or worries about the future.
